"Lomo" is the Spanish term for tenderloin. It is a cold cut derived from the back of the Iberian pig, specifically the cylindrical section that is devoid of external fat. This portion is highly regarded as one of the most prized and esteemed cuts of meat from the animal.

Iberico Lomo is typically prepared by marinating it and then encasing it in natural pig casings. It is typically around 60 cm in length and weighs approximately 1-1.2 kg on average.

This cold cut boasts a distinctive, intense, and natural flavour, coupled with a firm texture and a robust aroma. Its color is reddish, lighter on the outside and more vibrant on the inside. Its internal appearance is marked by a marbled pattern created by the presence of fat. This fat marbling, a hallmark of Iberian pigs, is a result of their acorn-rich diet, known as "bellota."

Lomo is considered one of the most authentic meat products available, as it undergoes minimal processing, with the only notable step being the marinade with paprika. This sets it apart from other cold cuts like chorizo, as lomo is made from whole meat that is cured inside the animal's intestine, while chorizo is typically made from minced meat mixed with fats before curing.
